Le speaker Louis-François Marcotte: Underneath the exterior of a top chef lies a man of the woods.
In this interview, Louis-François Marcotte explains to Formax’s speaker Guy Bourgeois how he manages to pick up the phone on weekends.
According to him, no one can perform seven days a week. It is therefore essential to find YOUR way of disconnecting from work to better bounce back when it comes time to perform.
Of course, everyone can do this in their own way. For some, it’s sports, cycling, running and physical activity in all its forms. Others prefer housework, renovations and gardening.
For Louis-François, it is a return to the earth. He has always felt deep down the desire to connect with the earth. He loves logging, transporting branches with his 4-wheeler, and using his tractor to work the land.
He also loves doing all kinds of renovations. In his many restaurants, he has always had a hand in the work (so to speak), and he has always been fully involved in the design and decoration.
This was the case with the last café they opened with Patricia Paquin, his wife. In fact, on their Instagram accounts, you can see them both laying ceramics, painting walls and doing a lot of work that they could have delegated.
Les clients qui visitent « Chez Cheval » peuvent se dire que les tables sur lesquelles ils mangent ont été sablées et peintes par Louis-François et Patricia.
You! How do you pick up?
Additional information: Chez Cheval is a café located in Mont St-Hilaire. It is named after the first mayor of the town of Mont St-Hilaire, Guillaume Cheval.
The special thing about this café, apart from its delicious food and excellent coffee, is that they hire people with ASD (autism spectrum disorder).
This is all the more reason to go there from time to time.
